African Peanut Stew

This is one of my favorite recipes to use any greens.
Serves 4
2 tbls. vegtable oil
1 onion, chopped
1 can pineapple chunks or tips with juice
½ cup chunky peanut butter
chopped, clean greens, at least 4 cups.
hot sauce to taste
salt to taste
cooked brown rice

Heat the oil on medium and add chopped onion. Cook until transluscent. Add the pineapple and peanut butter. Heat until the peanut butter is smooth. Add enough hot sauce to give it the bite you like. I use vietnamese garlic-chili paste. Add the greens and cook until they are tender. This will take a short time for spinach and longer for tougher greens such as kale or collards. You may need to add a little water to make the sauce the right consistancy. Salt to taste. Serve over brown rice.

Roasted Bok Choy

Serves 3. Prep time 5 minutes, cook time 8 minutes.

1 lb bok choy
1 tablespoon olive oil
3 dashes ground black pepper
2 tablespoons soy sauce
3/4 tablespoon sugar
1/2 tablespoon apple cider vinegar
1/2 teaspoon sesame oil
1/4 teaspoon white sesame seeds

Preheat oven to 400F.

Clean and rinse bok choy, trim stems off at the bottom, slice and quarter. Prepare dressing by combining soy sauce, sugar, apple cider vinegar, sesame oil and sesame seeds. Stir to mix well, set aside.

Toss bok choy with the olive oil and black pepper. Arrange on a baking sheet lined with parchment paper. Bake 8 minutes. Serve with dressing.

Chris Kosowski's Magical Maple Mustard dressing

1/3 c cider vinegar
3 cloves garlic peeled and crushed
2 shallots peeled and diced
1 teaspoon fresh pepper
1 tablespoon smooth Dijon mustard
1 tablespoon coarse mustard
2/3 c real maple syrup
1 c vegetable oil

Put everything except the oil into a blender and blend until smooth. Continue blending while slowly adding the oil until well mixed.

Maple Balsamic Vinegrette

1 cup balsamic vineger
1/2 cup maple syrup
4 tsp. dijon mustard
4 minced garlic cloves
1/4 cup lime juice
3 cups olive oil

Put everything except the oil into a food processor and pulse until mixed. Turn on food processor and slowly add the olive oil until well mixed. Season with salt and pepper.
